Tahini Coffee

When I saw this recipe in the vegan cookbook Vegan Comfort Food by Alicia C. Simpson I honestly was not too sure about it. A beverage that included tahini and molasses? Strange, yes. Just strange enough that I had to try it out. Luckily I was pleasantly surprised.

1 cup milk (almond or soy work nicely)
1 teaspoon blackstrap molasses
1 teaspoon tahini

Warm the milk on the stove or microwave for 1 minute. Add the tahini and molasses and whisk with a fork until it is blended. You can drink it warm or over ice on a hot day. I added nutmeg and agave syrup for a little extra flavor.

Tahini is a paste of roasted sesame seeds. It’s often used in hummus recipes. It’s a good source of calcium and magnesium and has a nutty sort of flavor
Blackstrap molasses is a sweetner that is actually good for you! It has lots of calcium, iron and other minerals. It is created by boiling the sugar syrup a third time and is the concentrated byproduct left over after the sugars sucrose has been crystallized.

 You can find both these ingredients at your local health food store.
Will all the  vitamins and minerals in this drink, it’s a great way to start your day!
