Vegan Potato Soup

This potato soup is easy to make and sooo delicious. Best of all it’s vegan!

Ingredients:

6 medium potatoes peeled and cubed
6 cups vegetable stock
2 cups soy milk
1 Medium onion chopped
Salt
Pepper
Olive Oil
Bay leaf
Soy sauce
Soy cheese

In a big soup pot heat 3 table spoons of  olive oil and cook onion until glassy and golden. Add veggie stock and potatoes and bring to a boil. Boil until potatoes are soft. Reduce heat and add soy milk. Transfer the mixture to your food processor in small batches and blend until the potatoes are creamy. Transfer into a second pot. Once everything is blended together add a bay leaf, a dash of salt and pepper, one cup soy cheese and soy sauce to taste.  Let simmer for a half hour. Garnish with more cheese salt and pepper.
This recipe has the non-vegan husband’s seal of approval. He happily gulped down several bowls in one sitting. If you give it a try let me know what you think in the comments!
